I have always enjoyed cooking. I love discovering new recipes and testing them out. However, I’ve never ever been much of a baker. Fast forward to having kids and I’m constantly trying to find new little recipes for healthy meals which includes baking. And of course, kids love to help with baking so it becomes a great little bonding experience for Jax and I. Hudson isn’t quite there yet, but he enjoys eating the results!
I’m constantly searching for healthy recipes on Pinterest etc. that I know the kids will gobble up and are relatively easy. These breakfast cookies are easy-peasy and a hit in my household. My husband and I even eat them and there is zero guilt! What I especially love about this recipe is that it calls for bananas. Often my kids decide they want to open a banana and not finish it. It’s crazy how kids change their tastes sometimes on the daily. Jax used to love Pizza, then one day he decided he hated it. Even though he loves the sauce, cheese and bread (insert giant eye roll). I know you mom’s feel me! It’s even more maddening when they don’t try something new and say they don’t like it without even trying. So, I keep testing and testing and luckily if they don’t like it, we can eat it as they are all healthy snacks.
