I am by no means a vegan or vegetarian, but I do LOVE food and mixing up difference ingredients in the kitchen can be so much fun, and a nice change. I have no issues throwing in a few vegetarian/vegan meals into the meal plan to keep things healthy and interesting.
On this particular day, Pinterest led me to the Cooking Classy website and thank god it did because this black bean taco recipe is now a go-to meal in our household. When my mom comes for dinner she often asks for me to make it! Do not be fooled, carnivores of all kinds will gobble these up and feel fully satisfied – I assure you!
I love a simple recipe and this one certainly fits that bill. With two busy little ones running around, I just don’t have time to spend all day in the kitchen like I used to.
With this recipe, you literally mix black beans with salsa, cumin and chili powder for the base, simmer then mash if you prefer. We prefer this method as it stays together better in your taco. Then add all your typical taco garnishes like tomatoes, shredded lettuce, cheese and whatever else you fancy.
The avocado crema is the perfect icing on the cake for this recipe. Just blend greek yogurt with cilantro, lime juice and avocado. I usually do a double batch because I’m a “sauce-a-holic” and it works so well with other recipes too. For example, I use it on salmon burgers too, and it’s just perfect! Nacho dip too!
I have also incorporated the base bean mix into breakfast leftovers in a little flatbread with some cheese, and the burrito bowls are a great next day leftover meal.
I can honestly say that I will never make meat tacos again! Jax loves these even with a kick of spice in them. There’s truly nothing like a healthy, quick, crowd-pleasing meal. Try this out and let me know your thoughts.
