It’s been a while since I posted a recipe, so with Jax’s new found love of cauliflower, I was inspired to try something new! Of course, I went to Pinterest, one of my go to for great recipes and other ideas. It wasn’t long before I found these amazing savory muffins from Kirbie’s Cravings. As soon as I saw simple ingredients, I was sold!
All you need are: eggs, cauliflower, shredded cheese, almond flour, baking powder, Italian seasoning, onion and garlic powder (yes, so easy)!
Side note: I was out of onion powder so I just threw in some poultry seasoning instead and it worked just fine. She also recommends that you use parchment muffin liners so they don’t stick but I didn’t have any on hand. I do however have the Gotham Steel muffin pan so it doesn’t stick anyway! A little olive oil, just in case, and they literally slide right out.
Kirbie’s Cravings uses a food processor but to avoid another mess it was easy enough for me to finely chop the cauliflower florets. One less dish to clean is always a win in my books! Also, you’re supposed to mix half the shredded cheese in the actual recipe and then top them all with the remaining cheese. By accident, I threw in all the cheese and it turned out just fine.
Jax LOVED making them with me. He loves to be part of cooking and baking with me. Although sadly, when it came time to try them, he wouldn’t even take a bite! Ugh, the joys of feeding children! Am I right? That being said, they are the perfect little snack for me!
Super healthy and guilt free, these are a great in between meal option. I’ve had them for breakfast as well. I’ll keep making them because you know what they say, it can take between 15 – 20 exposures or offerings before a child is willing to put a new food in their mouth. It’s recommended not to rush this process and to keep offering the food and not give up on a particular food until you have offered it at least 20 times. Super frustrating but this too shall pass. In the meantime, I have a wicked snack for myself and another fun baking session with Jax!
